Thai-style Laksa

Laksa is very easy to make. I like this variant (quantities for two people).
I large pot of water Put on to boil
1/2 chicken breast (Or pork, or beef, or whatever) cut into thin strips.
Chinese cabbage, or Choy or other greenery Wash well, and tear into small pieces
1 tablespoon oil
1 teaspoon turmeric
1 tablespoon Red Curry PasteStir fry curry paste and turmeric for a few seconds
Add the meat, and stir fry for a minute or two until the meat is mostly cooked
250ml Coconut milk, 250ml Water Add to meat and spices; allow to come to boil; meanwhile...
1/2 packet rice stick noodles Put noodles and cabbage into boiling water
1 Tablespoon sugar(use 2/3 Tblspn if using palm sugar)
1 Tablespoon fish sauce
1 Tablespoon lemon juicestir into soup, taste, and adjust seasoning
1 Pkt fried Tofu PuffsCut each puff into two diagonally and add to the soup
The cooked noodles and greensDrain the noodles and greens; spoon into large bowls
Bean sprouts Put bean sprouts on top of noodles in each bowl
The soup Pour the soup into the bowls
Laksa weed (vietnamese mint) OR coriander leaves Use to garnish
Dried chilli flakes, dried fried shallots Allow people to help themselves
