Peter's Way with Mangetout Peas

Mangetout (snap, honey or snow) peas, a small handful per personTop tail and string the peas, wash well.
1 slice pancetta for every two servesCut into 1cm squares
Fry the pancetta in a little olive oil until crispy
Lightly salted boiling water Throw the peas into the water, return to boil for one or two minutes. Do not overcook!
Drain the peas, and fry lightly for one minute with the pancetta and oil
et voila tout ... serve while still hot
I created this recipe after one in Goose Fat and Garlic, specifically to go with braised duck breast served with Cous-Cous, but it goes well with almost any meal.
